Gingerbread and Prune Muffins
With the Xmas season almost upon us visitors in and out of our kitchen places pressure on the home cook and home baking is needed. With your De’Longhi oven it is possible to achieve fabulous results in minutes – try these super festive gingerbread and prune muffins – they freeze well and all the spice and ginger conjures up a festive mood. Remember with muffins only fill them once in the baking trays – do not try to fill twice or “top up” the muffin mix as this results in a flat muffin and always ensure your baking powder is relatively fresh. If moths fly out of the baking powder when opened you will not get a great result – also from all our research it shows that good quality flour rather than a generic flour makes a huge difference. Finally fan bake works best so switch to fan bake 190degC in your De’longhi oven.

Ingredients
- 2 cups (270gms) flour
- 3 tsp baking powder
- A pinch of salt
- ½ tsp ground mixed spice
- 1 Tbsp ground ginger
- 1 cup of prunes roughly chopped or snipped with scissors
- 1 tsp vanilla essence
- 1 egg
- 1 Tbsp golden syrup
- 1 cup dark brown sugar
- 250mls milk
- 125 mls of a flavourless oil like rice bran, grape seed or canola oil
- 2-3 pieces of crystallized ginger finely minced
Method
- Preheat oven to 190°C.
- Sift into a bowl 2 cups (270gms) flour, 3 tsp baking powder, a pinch of salt, ˝ (half) tsp ground mixed spice, and 1 Tbsp ground ginger.
- Add 1 cup of prunes roughly chopped or snipped with scissors, to the dry ingredients.
- In a jug, mix together with a fork; 1 tsp vanilla essence, 1 egg, 1 Tbsp golden syrup, 1 cup dark brown sugar, 250mls milk and 125 mls of a flavourless oil like rice bran, grape seed or canola oil, 2-3 pieces of crystallized ginger finely minced.
- Add this mixture to the sifted dry ingredients and prunes stirring until only just combined.
- Spoon this mixture into 12 greased muffin tins and bake 15 to 20 minutes.
- Keep an eye on them. Leave these in the tins a minute or two before turning out onto a rack. These muffins freeze well and you can add extra ginger if you like.
