Method
Shortcut Pastry
- Mix all the pastry ingredients into a bowl to make the shortcut pastry
- Leaving to rest for 30 minutes
- Crumble the pastry into a 28cm x 18cm cake tin and lightly pressed down
Ricotta Filling
- Beat the eggs and sugar until thick and creamy
- Add the ricotta and mix well
- Add the cherry brandy, vanilla sugar, lemon rind and salt
- Add and fold in the flour
- Spread the mixture into the pastry evenly
- Bake at 180° for 50 - 60 minutes until the cheese mixture has set
