Tuscan Cheesecake

Tuscan Cheesecake

This cheesecake with a difference is perfectly matched with a coffee from your DéLonghi automatic coffee machine.

Ingredients

Shortcut Pastry

  • 250g flour
  • 1 pinch salt
  • 150g butter
  • 100g sugar
  • 1 egg yolk
  • butter for the tin

Ricotta Filling

  • 3 eggs
  • 100g sugar & 500g ricotta
  • 1 small packet vanilla sugar
  • 3 tbsp cherry brandy
  • grated rind of one lemon
  • 1 pinch salt & 1 tbsp flour

Method

Shortcut Pastry

  1. Mix all the pastry ingredients into a bowl to make the shortcut pastry
  2. Leaving to rest for 30 minutes
  3. Crumble the pastry into a 28cm x 18cm cake tin and lightly pressed down

Ricotta Filling

  1. Beat the eggs and sugar until thick and creamy
  2. Add the ricotta and mix well
  3. Add the cherry brandy, vanilla sugar, lemon rind and salt
  4. Add and fold in the flour
  5. Spread the mixture into the pastry evenly
  6. Bake at 180° for 50 - 60 minutes until the cheese mixture has set
