Joan's Peanut Slice
This recipe is supplied courtesy of Annabelle White: This recipe comes from the kitchen of an excellent Gisborne cook and many thanks to everyone for the recipe and the delicious sampling.
Ingredients
Slice
- 150g butter
- ½ cup sugar
- 1 dessertspoon golden syrup
- 1 cup flour
- 1 cup whole raw peanuts
- ½ tsp baking powder
- 1 cup rice bubbles
Icing
- 60g butter
- 1 Tbsp golden syrup
- 120g (a little over half a cup) icing sugar
Method
- Melt the first three ingredients gently in a large pot.
- Add the flour, peanuts, baking powder and rice bubbles.
- Place in a well greased 30x25x5cm slice pan and press down.
- Bake at 180degC for 15-20 minutes. Keep an eye on it so it doesn’t over colour on top.
- Ice while hot and cut into squares before it is cool.
- To make the icing: heat the icing butter in another pot, add the syrup and then the icing sugar and blend well.
Cook's tips
- You do not have to chop up the peanuts in this recipe but you can if you prefer chopped nuts.
- Heat the tablespoon by immersing in hot/boiling water and then measure the golden syrup for easy use and clean-up.
- Cut into pieces after you have iced the slice and then place into freezer.
- The slice does not need defrosting before enjoying.
- Vary the nuts if desired it has been made with pistachios or walnuts with equally good results. Don’t discard any crumbs from the tray – soften some vanilla ice cream and stir through the broken pieces for you own amazing ice-cream creation – buttery, nutty and crunchy all in one!
